Crunchy Brioche French Toast with Pan Fried Honey Cinnamon Apple Banana

If you know me, you know I love brunch! I’ve been drooling over pictures of brunch in Sydney, Australia where my sister lives. Two Sis Pyrmont has been my biggest inspiration so far. Once I saw their Matcha Pancakes with the pan fried banana I died inside.

  • Peanut Butter Cinnamon Honey Drizzle

  • Homemade Whipped Cream

  • Talenti Tahitian Vanilla Gelato

Recipes

Basically I had an idea of what I thought might taste good, I looked up a bunch of different recipes and combined them all. Here’s the base recipes for each of them along with changes I made:

Crunchy French Toast from The Pioneer Woman

  • 1/2 Cup of Panko

Pan Fried Honey Cinnamon Banana

  • Don’t remove the skin, just cut the banana in half and fry on open side

Peanut Butter Honey Drizzle

  • 2 Tbsp Peanut Butter

  • Honey to taste

Heat in microwave on 15 sec intervals, mine heated in 2, mix in honey

Homemade Whipped Cream - Came from my Mom’s recipe book

  • 1 Cup Heavy Whipping Cream

  • 1-2 Tablespoons Sugar to taste

Beat Heavy Whipping Cream until soft peaks form, add in sugar and beat until stiff peaks form

Garnishes

  • Crushed Pecans

  • Raspberries

  • Pomegranate jewels

Plating

  1. Stack two to three pieces of french toast in the middle of the plate

  2. Drizzle peanut butter around the edges in varying widths and lengths

  3. Drizzle honey around the edges

  4. Scatter pomegranate jewels and crushed pecans along the drizzles, put raspberries around edges

  5. Scoop whipped cream or gelato onto the top of stack of french toast, sprinkle pecans

  6. Add fruits (Lilikoi/Passionfruit in my case) to the side of the whipped cream

  7. Adhere pan fried banana on to the side with a toothpick - place the banana leaning against the whipped cream/gelato, then stick toothpick in down the stack of french toast to where it is no longer visible

  8. Add edible flowers if you have some!
