LILIKOI (PASSIONFRUIT) VEGAN TART - REMAKE FROM RAINBOW NOURISHMENTS

It’s been a while since I attempted baking something other than macarons… I spent a good three months perfecting the recipe and am still working on it! Anyway, my uncle is unable to eat dairy and I was tired of seeing him miss out on desserts at family dinners. To be safe, I decided to make this vegan tart to make sure he wasn’t having any new ingredients that he might be allergic to. This is a combination of recipes I found - not taking credit for the idea either, as it was originally created by Rainbow Nourishments!
Here are the recipes I used!
Crust:

Substituted 2 Tbsp Cornstarch for 4 Tbsp Tapioca pudding

Then 50 mins in the oven at 200 degrees on the wire rack.
Coconut whipped cream:
I used this Coconut Whipping Cream from Safeway!
Refrigerate overnight or freeze for 5 hours. Beat until soft peaks. Add lilikoi juice if desired.
That’s it! The total process took about two hours.
